Sea Bass Crudo with Chili and Pickled Shallot


Raw fish rewards precision more than almost anything else in a kitchen, which is why good chefs plate crudo tableside rather than sending it out from somewhere the guest can't see. This sea bass asks for that same discipline at home: sliced almost sheer, then dressed within moments of hitting the plate, lemon and a good extra virgin olive oil - just like Noor Fès - going on first, chili laid over for heat, and quick-pickled shallot scattered through for something bright and faintly sweet.

Ingredients

Very fresh, sushi-grade sea bass fillet, skin removed

300g

Small shallot, thinly sliced into rings

1

Rice vinegar

60ml

Sugar

1 tsp

Fine sea salt, a pinch, plus more for seasoning

1 Lemon, juiced

Noor Fès extra virgin olive oil

3 tbsp

Red chili, thinly sliced

1

Flaky sea salt

A few purple basil microgreens, for garnish

Steps

Pickle the shallot: Combine the rice vinegar, sugar, and a pinch of fine sea salt in a small bowl, stirring until the sugar dissolves. Add the sliced shallot and let it sit for at least 20 minutes, until the rings turn pale pink and lose their raw bite.

Slice the sea bass: With a very sharp knife, slice the fillet as thin as you can manage, on a slight angle, so light passes through each piece.
3.
Lay the slices out on a chilled plate in a single layer, slightly overlapping.
4.
Sprinkle fine sea salt evenly over the fish, then squeeze the lemon juice over the top, followed by Noor Fès olive oil.
5.
Drain the pickled shallot and scatter the rings over the fish, along with the sliced chili. Add a pinch of flaky sea salt and the purple basil microgreens.
6.
Dress and plate crudo as close to serving as possible, so the fish stays firm and every flavor stays distinct instead of blurring together.
